Rose-Colored Cupcakes (& a surprise!)

rose cupcakes 2017 lovelaughexplore.comAfter elementary school, Valentine’s Day becomes more stupid than fun. I often stare at the little Valentines treats and cards I used to pass out in class and miss the days of inclusivity where everyone gets treats like its Halloween.

Shai and I don’t do gifts or anything for Valentine’s Day but I love any excuse to bake for others (like these, and these, and these) so its perfect for trying out fun recipes. These “painting the roses red” cupcakes inspired by Alice in Wonderland may look like average cupcakes at first but the bottom hold the best surprise — a red velvet oreo (which I also used in this Valentines post)!

Place one red velvet oreo at the bottom of each cup and then fill the cups with batter like normal. For these, I used vanilla cake and dyed 1/4 of the batter red and swirled it into the cupcakes before baking.

I did the same for frosting. I use my standard buttercream frosting (1 lb butter, 1 lb powdered sugar, 1 tsp vanilla), split the mix in half and colored one half red. I put half and half in the bag to swirl onto the cupcakes.

The best part of these cupcakes is that you can use this setup in a ton of different combos. Have you seen the latest birthday cake oreos? Those would be perfect with birthday cake mix!
Chocolate creme oreos? Perfect with a peanut butter cake and chocolate, peanut butter frosting!
Chocolate mint oreos? Chocolate cake with mint-chocolate frosting!
The options last forever!
