As if you need a reason to have cupcakes with your girlfriends, seven years ago, Parks & Rec brought us Galentine’s Day. I have never watched this show but I see no reason why that should stop me from having a sweet treat with my ladies! (It is technically February 13th but I saw do it whenever you want!)

In preparation, I made these cute strawberry banana cupcakes. I actually used a Duncan Hines Strawberry Cake mix and the marshmallow toppers are seasonal strawberry and vanilla ones. The frosting is my homemade buttercream frosting with a touch red food coloring. For the filling, I updated my banana-jam recipe to make a strawberry banana one!

Strawberry Banana Jam

  • 4 cups mashed strawberries
  • 2 cups mashed bananas
  • 3 cups sugar
  • 1/4 cup lemon juice
  • 1/2 cup water

Slowly bring the sugar and water to a boil. Add strawberries and mix until well incorporated. Add bananas and lemon juice. Continue to stir until mixture thickens to the consistency you prefer (probably 10-15 minutes)

I don’t “can” properly because I don’t plan on storing the jam so I just let it cool completely and added it to the center of each cupcake and kept the rest for ice cream and bread!

This would go perfectly with a glass of champagne or my new favorite wine, Vinho Verde !
