If you are still scrolling through Pinterest looking for easy, no-effort treats that scream ” ‘Merica!” look no farther than these boozy popsicles. What could be more perfect for summer and the 4th of July than frozen champagne filled with red and blue fruits?! (the answer is probably nothing, FYI).

I used a (cheap) rosè champagne to fill each popsicle mold 1/2 full, then added as much fruit as I felt like from a bag of mixed frozen berries (strawberries, cherries, blueberries, cranberries, blackberries, raspberries) . Then I topped them off with more champagne to make sure they were super full, added the tops to the popsicle molds (they have the stick attached) and froze them overnight! Voila!

They were not a super smooth creamy popsicle, they were a bit ice-y but the flavor of the wine was there and the frozen fruit added just enough color, flavor, and interest. I was pretty excited about the outcome and I may be inspired to step up the creativity for the next batch.
