Cauliflower Crust Pizza

Being gluten-free can be a pain at times, especially when you just want some pizza. Making a cauliflower-crust pizza is a great way to get the flavor with a lot less calories, carbs, and gluten!

I never have fresh cauliflower on hand (always goes bad before I use it) but I always have a few bags in the freezer. I like to blend 1 bag up in my food processor and then pat it down with paper towels to get out the extra moisture.

Then I add – 2-3 eggs, about 1/4 cup cheese (I used white and yellow cheddar here), some salt, pepper, garlic salt, and a fee Tbsp of rice flour or almond flour.

Mix well and then form it into your crust!
Bake at 400’F for 20 minutes or until you see it start to look golden and firm


I added a pesto marinara, sautéed onions, mushrooms, and some more white cheddar and then placed it back in the oven for another 10 minutes

It has great flavor and is filling without making you feel weighed down!
