Hello Fresh!

The other day I had a coupon in the mail for a food service called Hello Fresh! and decided to try it out

It is a food delivery service that sends three meals each week that can be cooked for 1 or 2 people. Each meal comes in its own box with exactly what you need of every ingredient.

Unfortunately, while they have the vegetarian option, they do not have a gluten free option. One of the meals I could not eat at all and had to adjust the other.

The first meal I made was supposed to be Nectarine and Zucchini Panzanella which is basically a glorified salad. It calls for the baguette to be made into semi-croutons and mixed into the salad but since I can’t have that…and I don’t really like cold zucchini, I decided to cook everything and use quinoa instead.

I cooked the onions and nectarines in a pan to soften them and then added them to the cooked quinoa and added the white vinegar, mint and half of the fresh mozzarella to get it all warm and gooey. In another pan I sautéed the zucchini with salt and pepper.

I plated the nectarine quinoa first, then topped with the zucchini and finished it off with the rest of the mozzarella.

I have to say, I liked this WAY better than a salad.

For the second meal, I couldn’t eat it at all because it was a farro and Black Bean salad…and farro has Gluten. Sad

This was pretty easy. Cook the farro and then mix all of the ingredients together. There was shallot, cilantro, apple, avocado, black beans, and farro and then dressed with white wine vinegar, olive oil, salt and pepper.

I actually served this at the dinner party so it could hopefully be enjoyed.

For the final meal of the supply, I had a Barbecue Tofu box. This was a recipe for a homemade barbecue sauce with baked BBQ-seasoned tofu, over a bed of polenta with corn and green beans.

It was really delicious, not gonna lie. Baking tofu really helps the texture a lot and the seasoning packets they gave with it were delicious!

My trial subscription was for 3 weeks of food, I just got the new box yesterday so I’ll let you know what I thought of that week’s too!
