Cauliflower Pizza Boats

I have made a cauliflower crust pizza in the past as a healthy, gluten free alternative to full on pizza but the other night I decided to mix it up a little and make smaller cauliflower pizza boats with a similar cauliflower crust!

Ingredients

Crust
1 bag of frozen cauliflower (or 1 head of cauliflower)
2 eggs
1/2 cup almond flour
1/4 cup shredded cheese (I used Jarlsburg Lite)
1 tsp garlic salt
1/2 tsp Italian seasoning
1/8 tsp black pepper

Toppings

  • really whatever you want!
    I didn’t have any marinara sauce so I made my own by mixing stewed tomatoes with some garlic salt, onion powder, and Italian seasoning
  • whatever cheese you like, I used a combination of jarlsburg lite and muenster

I cooked (re: microwaved) the cauliflower and then used my hand blender to get it to an evenly mashed consistency before adding all of the other ingredients and mixing well. If you do not want any flour in this recipe I would probably use another 1/2 as much cauliflower, and an extra 1/4 cup of shredded cheese to help it stay together. I like how the almond flour makes the consistency thicker and more dough-like.

I line the mini-loaf pans with baking paper so that they are easy to just pull out when they are finished.

Press the cauliflower mixture into each tray and bake at 350 for 10 minutes

Pull the tray out and add the sauce and toppings and bake for another 10-15 minutes!

These make a great whole meal or would be a nice side with a few other additions!
